Air Fried Zucchini fries

Recently I was gifted an air fryer. It couldn't have come at a better time, with the Super Bowl right around the corner. I have heard such wonderful things about air fryers, giving crunch and texture to foods that are fried, without the grease.

Instantly, I began making buffalo wings (my dads favorite), pork chops, chicken tenders, and researching all sorts of recipes to crisp up in my new favorite appliance. I have to say, my favorite recipe I have tried thus far are the zucchini fries, which can be made just as easily in the oven.

My boyfriend and I ate two entire large zucchinis and it's an excellent way to eat your vegetables without the bland flavor. My boyfriend and I dipped these crunchy fries into blue cheese, but feel free to use ranch, sriracha, garlic aioli, or any of your favorite dipping sauces!

For these healthy fries, you will need 1-2 large zucchinis, 3 eggs beaten, 1 cup flour, 1 tbs garlic powder, and 1 cup panko bread crumbs (with parm or romano cheese mixed in).

Simply cut the ends off of your zucchini, cut lengthwise in half and both in half again. Cut the fries into strips about 1” thick. Set aside and whisk eggs in a small bowl. Place one cup of flour with garlic power on a small plate or bowl.

I always love to season my flour when dredging anything, whether with salt and pepper, or my favorite spice. Place your panko bread crumbs in another dish. Working in batches, dip fries into the seasoned flour, then egg, then panko bread crumbs.

Place your air frier or oven on 375 and spray your pan with cooking spray if using an oven. Cook for 15 minutes, flipping your fries after 10 minutes.

These fries came out so crispy due to the panko breadcrumbs (game changer!) and I was not missing the grease at all!

I highly suggest making these for the Super Bowl with a homemade ranch or lovely dipping sauce to go with. I know I will!
