Blistered Cherry Tomatoes with herb goat cheese

I think the biggest compliment any chef or cook can get us someone saying “I never knew that ingredient could taste so good”. That is what my fiancée said about this simple app, which will transform your homegrown cherry tomatoes into soft and sweet additions in this simple appetizer.
My sister makes baked tomatoes on crustini during Christmas every year, and I felt that it would be appropriate to utilize what I have growing right in my backyard. I also used fresh basil, thyme, and rosemary from the garden in my herb goat cheese, so if you have a garden, you’ll only need about 1-2 ingredients from the store for this! If you’re a big fan of the popular baked tomato and feta pasta, you’ll love this!

To make this delicious snack, you will need
1 French baguette toasted and sliced (crustinis)
4 oz fresh goat cheese
1 teaspoon fresh rosemary chopped
4-5 basil leaves chopped
4 sprigs fresh thyme
Red pepper flakes
2 cups cherry tomatoes
2 cloves minced garlic
Drizzle of balsamic glaze

Begin by Preheating your oven to 350°. Mash goat cheese with fresh basil and rosemary until well-blended. Cover and chill for 1 hour. Toss tomatoes in salt, pepper, chili flakes (optional) and some minced garlic and spread on baking sheet in a single layer and roast 30-40 minutes. Let tomatoes cool to room temperature. Spread goat cheese mixture on toasted bread. Top with a spoonful of tomato mixture and garnish with more fresh herbs and a drizzle of balsamic reduction. This is a dish everyone will love and it couldn’t be easier!
