Sheet Pan Beef Kofta

All over social media I have been seeing videos for sheet pan beef kofta. This is my simple and easy take on a viral recipe, using pantry staples and items you probably already have at home. No grilling or skewers needed - this is one of the easiest meals that comes together in under 30 minutes. This week I made it for my husband and fooled him into thinking he was eating ground lamb. It tastes just like a gyro and will definitely be in my weeknight meal rotation.

You will need:

1 lb ground beef

1/2 yellow onion finely chopped

1 red bell pepper finely chopped 

2 cloves minced garlic

1 tsp cumin

1 tsp ground coriander

2 tbsp chopped fresh parsley

Salt /pepper

To serve: 

4-6 flatbreads (pita, naan, etc.)

Tzatziki 

Sliced Red onion/fresh tomatoes 

Begin by preheating your oven to 420 degrees.

Into a food processor, pulse 1/2 of a yellow onion and 1 red bell pepper together until finely chopped. Drain out the liquid and add it to a bowl. (If you do not have a food processor, finely chop both your onion and bell pepper and drain out any liquid. (It will still come out delicious I promise).

Combine your ground meat, garlic, minced onion, bell pepper, coriander, cumin, parsley, salt, and pepper.  Mix until well combined. Spread the mixture onto a lightly greased baking sheet in a thin even layer (about 3/4 inch thick). Using a knife, cut about (4-5) 2-inch strips down the raw meat. Cook it for 20 minutes, then set your oven to broil and keeping a close eye on it, broil your meat for 2-3 minutes until the top is nice and golden brown. 

I like to serve this on pita with store-bought tzatziki sauce, sliced red onions, and fresh tomatoes. For more of a middle eastern flair mix your red onions and tomatoes with a light sprinkle of sumac and let it sit in the fridge for at least an hour.  You can also create your own yogurt sauce simply by mixing plain yogurt, grated garlic, some 

fresh lemon juice, and dill. I promise, you will absolutely love this quick and easy meal. Enjoy!
