Last weekend I tried out a new recipe on my parents and husband. Sometimes it works in my favor, and sometimes it's a miss, but they're all great sports and happy to try anything I put in front of them. I made this delicious bruschetta spread and will absolutely be making it for every summer occasion. The tangy flavor from the balsamic glaze had everyone going back for more. Featuring red and white colors, it would be a great dish for a Fourth of July bbq appetizer and will help you use up some of those tomatoes you might have growing in your garden. You will need:
2 packages Boursin spreadable cheese at room temp or 2 (4oz) packages of goat cheese
4 large beefsteak, roma, or your favorite tomatoes diced
Heavy drizzle of olive oil
Heavy drizzle of balsamic glaze over top
Salt/pepper
2 tbsp chopped basil
Serve with pita chips or club crackers
Begin by taking your Boursin cheese and spreading it along the bottom of a lipped plate or pie plate.
Next, deseed the tomatoes and chop into a small dice. I let it sit in a bowl for about 15 minutes with a light dusting of kosher salt to draw out some of the water.
After the additional liquid is drained, I added in some fresh cracked pepper, heavy drizzle of olive oil, and the basil and toss. Taste your mixture to see what it needs and season accordingly.
Spoon your tomato mixture over the cheese spread and drizzle heavily with some balsamic glaze. Serve with some pita chips or crackers and enjoy!
