My sister makes baked tomatoes on crustini during Christmas every year, and I felt that it would be appropriate to utilize what I have growing right in my backyard. I also used fresh basil, thyme, and rosemary from the garden in my herb goat cheese, so if you have a garden, you’ll only need about 1-2 ingredients from the store for this! If you’re a big fan of the popular baked tomato and feta pasta, you’ll love this!
To make this delicious snack, you will need
1 French baguette toasted and sliced (crustinis)
4 oz fresh goat cheese
1 teaspoon fresh rosemary chopped
4-5 basil leaves chopped
4 sprigs fresh thyme
Red pepper flakes
2 cups cherry tomatoes
2 cloves minced garlic
Drizzle of balsamic glaze
Begin by Preheating your oven to 350°. Mash goat cheese with fresh basil and rosemary until well-blended. Cover and chill for 1 hour. Toss tomatoes in salt, pepper, chili flakes (optional) and some minced garlic and spread on baking sheet in a single layer and roast 30-40 minutes. Let tomatoes cool to room temperature. Spread goat cheese mixture on toasted bread. Top with a spoonful of tomato mixture and garnish with more fresh herbs and a drizzle of balsamic reduction. This is a dish everyone will love and it couldn’t be easier!
